Tofu Bhurji also known as scrambled tofu is a vegan version of egg bhurji with subtle Indian flavours which you can easily make at home. Tofu is a good source of plant protein and when scrambled it serves as quick side dish for roti or as a filling for sandwich.
Ingredients:
2 tsp wood pressed oil
1/2 tsp jeera
1 onion, chopped
1/2 inch ginger
1 green chilli
1/2 tsp turmeric powder
1/2 tsp kashmiri chilli powder
1/2 tsp jeera powder
1 tsp coriander powder
1 tomato
A splash of water
1 tsp pink himalayan salt
150 gms tofu
1 capsicum
coriander leaves
