Beetroot sandwich recipe is a filling sandwich, ideal as meal for breakfast, lunch, dinner in your weightloss journey. This vegan sandwich has subtle Indian spices and a total winner if you love the goodness of beets.
I make my own sandwich bread and has stopped buying bakery bread since many years and this sandwich was enjoyed by my son. It is filling and super healthy. You need to try this no fuss super easy veg sandwich. I used my roti tawa to toast the sandwich and I also prefer to keep a heavy skillet on top as this will help in even toasting and sealing the filling. If you have not tried this method, pls do try.
Ingredients:
(green chutney)
2 sprigs of curry leaves
1 salted or fresh amla
1 greeen chilli
2-3 tbsp pottukadala or roasted gram dal
1/4 inch ginger
2-3 cloves of garlic
handful of shallots
juice of half a lemon
1/4 tsp turmeric and black pepper powder
1/3 tsp roasted jeera powder
1/2 tsp amchur powder
pink himalayan salt as needed
handful of coriander leaves (along with the stalk)

Beetroot Filling:
1/2 beetroot, grated
1/4 onion, chopped
1/3 tsp black pepper powder
1/4 tsp amchur powder
pink himalayan salt as needed
1 heap tsp of green chutney

Homemade sourdough bread
wood pressed groundnut oil as needed.
Tip: If packing for lunch, allow the sandwich to cool completely before transfering to the lunch box.
