It actually comes from the seeds of the fruit of the cacao tree; I remember during my childhood on one summer holidays while playing with my cousins at Kottayam, we came across the cacao tree and we managed to pull out a large fruit and somehow opened it and found some white seeds and in my all kiddish innocence thinking it is pure cacao I tasted some and it was the most bitterest taste I have experienced and the reason why I still remember it when I think of original cacao fruit. So, the seeds of cacao fruit does not taste like chocolate at all.

Raw cocoa is a super food which contains phytonutrients, sulfur, magnesium etc. The nutrients provides some benefits like gives you more focus and alertness, keeps you in a good mood, decrease depression etc.

Cacao nibs have more antioxidants than tea, wine, blue berries, and even goji berries. Epicatechin is a flavanol found in cacoa which in the process of manufacturing dark chocolate retains, but whereas milk chocolate does not retain much.

So, to get all the benefits cacao needs to be pure, least processed etc and that makes cacao nibs special. They are cacao beans that have been roasted, separated from their husks and broken into smaller pieces.
