Fresh Apple Cake with cinnamon-sugar-butter streusel topping is a very quick and easy cake.....with an extra cinnamony crrrunnch!!
Apples are in season now, and I love to bake with seasonal fruits......orange cake and apple tart are my favorites
This fresh apple cake is a really quick and easy one, it is the kind of cake where you need not pull out your hand mixers or even a whisk.....or even bring butter to room temperature.....its a really quick stir-and-bake sort of cake....which I am sure you will love as much as I did. I got the recipe, from an old magazine and had tried it a few times and completely forgot about the recipe......and when apples are in season, who can resist making fresh apple cake!!
The cake has a crumb topping with cinnamon, sugar, and butter.....I love crumb cakes ....who wouldn't love to bite into a crunchy crumb?? The original recipe had oil, but since I had plenty of homemade butter in the refrigerator; I used it....okay! I admit I am a butter freak!!
And lastly, this cake is total indulgence!! don't forget to hit the gym ....after that big fat helping :)

Ingredients:
Apples: 1 cup, peeled, cored, and diced (I used 200 ml cup)
Flour: 2 cups.
Sugar: 2 cups.
Butter (melted)/oil: 1/2 cup.
Vanilla extract: 1 tsp.
Baking powder: 1 tsp.
Cinnamon powder: 1-2 tsp.
Eggs, 2, beaten.
Salt: 1/2 tsp.
Walnut: 1 cup, chopped...(Optional, I did not use)
For the Crumb/Streusel:
Sugar: 1/4 cup (update-if your apples are not sweet you can increase sugar slightly)
Cinnamon powder: 1/2 tsp.
Butter: 1 tbsp, softened.
Method:
Grease and dust a baking pan.
Preheat oven to 180 degree C.
That's 1 cup of diced apples.
Dunk in the sugar and cinnamon powder and mix well.
Add in the flour. salt, and baking powder....mix well....I used a spoon. Tip: This prevents the apples from sinking!!
In another pan, lightly beat the eggs, stir in the melted butter or oil and vanilla extract....give it a stir.
Pour this into the flour-mixed-apples.
Pour into a greased and dusted pan.
Prepare the crumb by mixing sugar, cinnamon, and butter...and sprinkle on top of the cake.
Bake in preheated oven at 180 degree C, for 35 to 40 min or until done.
Serve warm!

ReplyDeleteTried this today. It was too sugary. Don't know what went wrong as I followed the instructions carefully. Any suggestions? Where the cups used for all the measurements 200 mL or did you use a regular one?
ReplyDeleteHello Anon-I used 200 mL cups for all my baking unless otherwise stated.....I guess the apples might be on the sweeter side...and maybe I am bit on the sweeter side :)...still thanks for stopping by with the feedback.
DeleteTried the recipe.. it turned out delicious and the smell of baking drove everyone crazy.. half the cake was over before It cooled. It is too sugary.. and not because of the apples.. there is just too much sugar in the cake and esp. in the topping. Will decrease the amount when I make it next.
