My Neighborhood....The Beauty.

I go for morning walks...a 30 minute walk on weekdays and weekends I just walk enjoying nature and rewind...today I am taking you along with me. The road is empty....and yes I live in a city.... Orange Cake...A Donna Hay Recipe...step by step.

It was just 8 pm and both the kids wanted orange cake..Really!! that was not my idea of spending a quiet Sunday evening...... ya...my kids are like that....they will coax me, butter me, hug me, sweet talk...into baking cake.....at night. Well, they promised that they will help me all through and also wash the dishes and help me clean the counter and kitchen....and that is really sweet of them and I could not resist then. Meen/Fish Masala Puttu...step by step.

Meen puttu or meen masala puttu again is a  quick breakfast or even dinner.  Meen/fish puttu is a traditional Kerala recipe. Today, I am sharing meen masala puttu which is a family favorite, its simple and easy. If you have leftover fried fish then its double easy. I am showing you how to make this authentic dish with fried fish . Sometimes, for dinner my son will butter me for meen puttu and I make with fish fry , this is an ideal quick fix for two.  I have already posted Erachi/Meat Masala Puttu earlier; the masala for fish is almost the same; if you love erachi puttu just head over :). Note: If you do not intend to use or do not have fried fish, just cook the fish with little salt, turmeric, and pepper, cool and de-bone it and then add it to the masala. How to make Pre-cooked Rotis/Chappathi.

Chappathi or Roti is an essential part of Indian diet. Homemade whole wheat roti is the best, though sometimes  we do not get time to make roti or might be too tired to make roti and might opt for store- bought ones.  So, suppose you can make ahead these rotis, it would be awesome right?? and if you have some tucked away in the fridge....all you have to do is just heat them up and ta-da- hot soft rotis are ready! My husband and kids love to have hot steaming phulkas or roti and I always make sure I have some precooked rotis in the refrigerator ....just in case. Precooked rotis are just partially cooked and cooled to room temperature and covered in a napkin/cloth and  it will keep for up to 4 days in the refrigerator longer in the freezer. So, often I half cook the roti and store away for later use, especially when there are guests coming over....all I have to do is heat the tawa and complete the cooking. So, today I am sharing how I partially cook my rotis and store....

Masala (Erachi) Puttu (Kerala Style)....step by step.

Masala puttu or erachi puttu or meat masala puttu or kerala style masala puttu......is a traditional Malabar breakfast. Pottu.... the most favorite breakfast at home while growing up....amma used to bring in some twist to the routine puttu and kadala curry or puttu and ripe plantain or puttu with ripe bananas . My son loves puttu....and this is his favorite...he loves meen masala puttu too. Erachi/meat puttu has a distinct flavor and the best part is that the  masala can be made ahead and refrigerated. Amma used to keep aside a little bit of meat she has minced for making cutlets....and make this as a special for us kids....well I am sort of carrying that tradition. All you need is some cooked minced meat or cooked chicken, shredded or mutton....like amma used to do I keep aside a bit of the minced meat when I make beef cutlets.
