Homemade fried chicken....my kids call it amma's KFC fried chicken.
Sometimes I cut the chicken into long strips (boneless) and my kids call it ChicKing chicken strips.
My kids cannot tolerate KFC chicken, they get stomach upset and because they like fried chicken so much, I googled and googled ....researched....and finally perfected this recipe. No nasty chemicals or weird stuff, just perfect.
Last Sunday when I made this I was finally able to take some pics and since there was no cornflakes in the pantry, I altogether omitted it, and used coarse breadcrumbs (do not use fine breadcrumb; we need coarse breadcrumbs for this recipe). So do not hesitate to make fried chicken if you ran out of cornflakes and yes you can also use oats instead of cornflakes for a more healthier version, but the color after frying will be on the darker side.
My version is so simple and easy to make.....you can also roll in bread crumbs and keep in refrigerator and fry later. I did not use all purpose flour because once I made with a recipe that called for dipping in flour first then again after the egg dip, dip in flour mixed cornflakes ....somehow I dint like the flour taste in the fried chicken....so now I only used cornflour (which is more healthy too) and found an easier way which can also be made ahead and fried later.
Another important thing to be noted is that the chicken should be deep fried and the oil should be really really hot (360 degree C).
An update: Aug 5, 2015: I posted this recipe about 3 years ago in 2012 (Sep) and since then, this recipe was tried by you, favorited by some, adapted by many...and I showed a boneless version of this in a cookery show. Even, today this recipe is so perfect that I make it exactly as I first posted in 2012. I hope this homemade kfc fried chicken will be liked by my new visitors too.
Homemade breadcrumbs: Crumble bread and put it a a grinder and grind it...for this recipe grind it coarsely. Keep aside.
How to make kfc fried chicken at home with step by step pictures.
In a bowl squeeze in the lemons, put in salt, chilly powder, pepper powder, turmeric, grated garlic and ginger (you must grate it as this gives a more intense flavor and if you have access to garlic powder, and ginger powder use it 1 tsp each). Mix all this.
Put cleaned chicken (after washing the chicken squeeze it to remove excess water or leave it in a strainer for 10 min) into this and rub it well all over the chicken. Then add the cornflour.
Mix well, cover and keep in the refrigerator for at-least 1 hour.
Beat half an egg with a fork and pour into the chicken. Mix well so that it is evenly coated.
Place the breadcrumbs in a shallow dish, and take each chicken piece and dip in the breadcrumbs, also press firmly with your fingers and gently lay it on a container, until all the chicken pieces are coated with the coarse breadcrumbs. You can keep the coated chicken pieces in the refrigerator or freezer and fry them later.
In a heavy bottom pan, heat oil, the oil should be very very hot (360 degree C) and put in the chicken and deep fry, you should be careful so that the outer covering does not brown and loose its color, so simmer the fire on and off. Strain the chicken on a paper napkin.
Your juicy tender homemade KFC fried chicken is ready...Serve hot with tomato sauce.

NOTES
- The lemon juice helps to make the chicken tender and juicy and hence marinating with lemon juice is very important. You can also marinate in curd or buttermilk.
- Using rosemary is optional and if using lightly crush with both hands to release flavor.
- I used turmeric purely for its health benefits; you can skip it if you do not like.
- I would not suggest you to use garam masala to make homemade KFC style fried chicken; as garam masala takes away the authentic American taste of the fried chicken.
- KFC fried chicken can be coated with crushed cornflakes and flour instead of coarse breadcrumbs. To make KFC chicken more healthy; you can coat it with crushed oats or brown breadcrumbs and you can also bake it in oven.
- I have made this recipe as home-friendly as possible; the idea is to make KFC fried chicken at home with the most basic ingredients available in the pantry and within budget.
