Snakegourd is one vegetable that is available all throughout the year in Kerala. It is not one of my favorite veggie, but after tasting this at one of my friends house I instantly gave it a try.
Ingredients:
Snakegourd: 1 medium size.
½ cup: Tur dal or sambar dal.
½ cup: Scraped coconut.
Chopped (1/2)onion or 2 or 3 shallots.
1 tsp: Red chilly flakes.
3 cloves: garlic.
Turmeric powder: ¼ tsp.
Mustard seeds: ¼ tsp.
Coconut oil: 1 tbsp.
Salt and curry leaves.
Method
- Soak the dal in water. Chop snakegourd and keep aside. Grind coarslycoconut with turmeric and garlic and keep aside. Heat a kadai and put in the oil and when it is hot add the mustard seeds, chopped onion, chilly flakes, turmeric, and curry leaves.
- Drain the dal and put in with salt and little water and cover it and cook in low fire. (the dal should not be over cooked, it should be ¾ cooked.)
- Put in the chopped snakegourd and mix it well (can add little water). Cover it and cook for about 3-5 min and stir occasionally. Add the coconut and stir it nicely and cover for a minute. Serve hot with rice.
Tried this many times and turned out to be really good every time. Thanks for sharing.
