Bittergourd was not my favorite until I tasted this at my friend Merry's place. She had prepared this with raw mango and I immediately fell in love with it.
Ingredients:
Bittergourd: 1
Onion: 1.
Green chilly: 2.
Raw mango: 1
Garlic: 2 or 3 cloves.
1 cup grated coconut.
Curry leaves.
Salt to taste
Coconut oil: 1 tbsp.
Mustard seeds: 1/2 tsp.
Method:
Chop bittergourd, onion, and mango.
Grind coarsely coconut, green chilles, and garlic.
In a pan heat 1 tbsp of oil and put in mustard seeds and curry leaves.
Put in the chopped bittergourd, onion, mango, and coconut, add salt and mix well. Add little water and salt. Cover it with a lid till cooked.
Serve hot with rice.
