curd quinoa or yogurt quinoa is a simple and healthy recipe which you can put together in under 10 mins if you have some cooked quinoa in your refrigerator. When it comes to eating healthy, dinner is the most crucial time; I mean you eat healthy in the morning and at lunch, but dinner time you just lose the grip, maybe because you are tired after a hectic work schedule...whatever the reason maybe, sometimes cooking an elaborate healthy meal for dinner is most often cumbersome....well, at least in my case.

this recipe is inspired from curd rice which we all love; so I thought why not make the same with quinoa for a gluten free meal and I had some pomegranate seeds (which is in season now) and that added color to this dish along with a fruity crunch. quinoa, fox tail millet and dalia are the grains I like to use for a rice-less meal. And as always for everyday meals I love easy and quick recipes.

FYI quinoa is an ancient seed grain which is completely gluten free, pls check my youtube video for more info on quinoa.

INGREDIENTS:
1 cup cooked quinoa
Curd/yogurt: 4-5 and more if needed
salt: as need
--------
1 tsp gingelly/sesame oil
1/4 cup raw peanuts
1/4 cup pottu kadala
salt as needed
-----------
1 tsp gingelly/seasame oil
1/2 tsp mustard seeds
1/2 tsp fenugree/methi seeds
1/4 inch chopped ginger
2 green chilies, chopped
1 sprig curry leaves
2 whole red chilies
1 tsp urad dal
1 tsp chana dal
1/4 tsp kayam/hing
-------------
1/4 tsp black pepper powder
1/4 cup of pomegranate seeds
2-3 sprigs of moringa leaves (optional)
coriander leaves to garnish.
