Veg sandwich recipe; this is my easy sandwich with leftover green chutney and aloo which I make for aloo-paratha. Veg sandwich makes a filling and healthy meal; and so these are often for lunch boxes.
Vegetable sandwich can also be made with boiled and sliced potatoes; but I like the seasoned potatoes which I make for aloo paratha. The tangy green chutney gives a good flavor to the sandwich and yes you can play around with the filling like adding in some fresh palak leaves or maybe a cheese and if you are health conscious then you can omit the butter, just adjust everything to suit your taste.
Step by Step Veg Sandwich Recipe
Serves: 2
Spread butter and green chutney on one slice of bread,
Spread mashed and seasoned boiled potatoes.
Top with chopped or sliced onions Cover with another slice of bread and grill on a hot tawa. Slice and serve with tomato sauce.

INGREDIENTS
- Bread Slices: 4
- Mashed and seasoned potato: 4 tbsp
- Green Chutney: 2 to 3 tbsp
- Butter: 2 tsp
- Onion: 1, chopped.
- Tomato: 1, sliced (optional)
- Chat Masala: To sprinkle
- Salt: To Sprinkle
METHOD:
- Trim the edges of the bread and spread 1 tbsp of butter on one side.
- Spread 1 tbsp of green chutney over the butter.
- Spread mashed and seasoned boiled potatoes over it.
- Top with chopped onions.
- Cover with the other half of the bread.
- Heat a tawa or skillet and place the veg sandwich on it and grill both sides pressing ligtly with a spoon.
- Cut into two or four and serve with tomato sauce.
NOTES
- I do not usually trim the edges as I make this for my kids
- You can also top sliced tomatoes, I did not use as my mashed potatoes have some amchur/dry mango powder in it.
