Shrimp fried rice with vegetables is my idea of a quick under 30-minute dinner idea. Packed with lots of shrimp and vegetables unlike the typical "takeaway" where a bowl of shrimp fried rice, would just have 3-4 shrimps.

 My son, loves this Chinese style shrimp fried rice so much that, I make whenever I get some fresh shrimp. Living in coastal Kerala, fresh seafood is a blessing.

Making fried rice is a breeze if you have left over cooked rice, otherwise; when I plan to make...the first thing I do is, I set a pot of water to boil to get the rice cooked. For me, fried rice is an excellent way to add vegetables into my kids diet, moms please take note of this.  Sometimes, I make vegetable fried rice the easy way.

 I lightly fried the shrimp in oil and stir fried the vegetables in the same oil....because I wanted everything to be bursting with the shrimp flavor.

Step by Step Method:
Serves: 4.

I cubed one carrot, half of a capsicum, and white part of the green onion, keep them aside.
Heat a large pan or wok or kadai.....add oil and lightly fry the sliced garlic cloves

Add in the cleaned shrimp.....let it fry for 30 seconds and then flip over and again allow it to fry for another 30 seconds.....and when it starts to turn to pink and transparent....add in half tsp pepper powder and salt. Allow it to cook and then remove it to another plate.

Into the same pan, add in the chopped white onions, stir for a few seconds....and then add in the vegetables....stir fry for a min on high heat.

Add in 1 tsp all-in-one sauce (affiliate link) and 1 tsp soy sauce and....stir!

Add 1 tsp salt and the cooked rice.
Add in 1 tsp pepper powder and the stir-fried shrimp......sprinkle with chopped green onions or spring onions.....toss the rice well and let it heat up. If needed you can add salt or a bit more soy sauce.
That's it! My easy shrimp fried rice is ready.....did it take 30 minutes??

Enjoy this easy shrimp fried rice, remember no take-aways please....making them at home is so easy and quick....all you need to add extra is a "pinch of your love".

  INGREDIENTS

  • Shrimp: 200 gm, shelled and deveined
  • Carrot: 1, peeled and cubed
  • Capsicum: 1/2, cubed
  • Garlic: 6 to 7 cloves
  • Green Onion: 1 bunch, chop the white part and use with vegetables and green part for garnishing
  • Pepper Powder: 1 1/2 tsp, divided
  • Soy Sauce: 1 tsp
  • Ching's All-in-one sauce: 1 tsp
  • Cooked Rice: 4-5 cups
  • Refined Oil: 2 to 3 tbsp
  • Salt: About 1 to 1 1/2 tsp or as needed


  METHOD:

  1. Heat a large pan or wok or kadai, add oil and lightly fry the sliced garlic cloves

  3. Into the same pan, add in the chopped white onions, stir for a few seconds and then add in the vegetables, stir fry for a min on high heat.
  4. Add in all-in-one sauce and soy sauce and stir.
  5. Add salt and the cooked rice.
  6. Add in pepper powder and the stir-fried shrimp, sprinkle with chopped green onions or spring onions. Toss the rice well and let it heat up.
  7. If needed you can add salt or a bit more soy sauce.
  8. Serve with Gobi Manchurian.

NOTES

  • You can marinate the shrimp with soy sauce, pepper, and salt. I did not do it as the color will change a bit and like my shrimp to retain its color.
  • If you do not have left over cooked rice, just cook the rice first and make sure that the rice is only 3/4 cooked (al dente) when straining, this will help in maintaining the texture of the rice. For fried rice, it is always preferred; cold and refrigerated rice, so once it is added into the wok, allow it to heat up a bit.
  • You can also add 2 scrambled eggs into the rice.....thus making it a power packed full meal. Be careful when you add salt as the sauces have a bit of them in it, adjust them to your taste.

    1. If not using all-in-one....you should add a bit of oyster sauce and green-chilly sauce maybe half tsp each! hope this helps, though if you can find all in one....do stock that up...its excellent for Chinese dishes. I will put up an amazon link for your ease.
