Ice Cream Brownie Pie With Snickers, a dessert with brownie as its base with two different flavors of ice creams, plus caramel and chocolate sauce drizzled....and topped with SNICKERS!! It can't get any better than this!!
One bite into this dessert will take away all your worldly woes...and you will not stop at one helping....I guarantee that...its total unselfish indulgence.....dieters forgive me :)
I have been MIA for a few days and that is because amma visited me after a loooong time....I had a wonderful time with her....and enjoyed some of her food...ah! yes! mom's food is the best!! Don't you feel so?? She baked my favorite cake for me.....but my kids showed superiority over them....yes!! kids and grandmother bullied me!! have to admit that amma's visit was sort of a tonic for me!!
I layered with two ice creams; chocolate chip ice cream and vanilla.....over the brownie crust.
Brownie-vanilla ice cream-caramel and chocolate sauce-cashewnuts-chocolate ice cream with chocolate chips-snickers-more chocolate sauce on top....this cant get any better=YUM!!
This ice cream brownie pie has multiple steps, but I assure you they are easy and the chilling part takes some time though....if you are in a hurry you can use any Box Brownie Mix...I really enjoyed creating this ice cream brownie pie...hope you will too.
Notes:
I used Amul vanilla ice cream and chocolate ice cream with chocolate chips. I allowed the ice cream to soften a bit and measured in 200 ml cups. You can use any brand ice cream or even with just plain vanilla only. Since I am a chocoholic I used chocolate ice cream as well.
I made the brownies in the evening....and allowed it to chill a bit...then topped with the vanilla ice cream and once it was set, topped with chocolate ice cream....I left the pie to set overnight in the freezer.
You can use a spring-form pan, since I did not own one, I used my borosil glass baking pan.
You can use a ready made brownie mix instead of making it from scratch.

Lets Make The Brownie First:

Ingredients for the brownie:
Butter, melted: 1/2 cup.
Sugar: 1 cup.
Eggs: 2, beaten.
All-purpose flour: 1/2 cup.
Cocoa powder: 1/3 cup.
Vanilla extract: 1 tsp.
Baking powder: 1/4 tsp.
Salt: 1/4 tsp.
Ice Cream Pie:
Vanilla Ice Cream: I used about 2 cups from the 1 liter pack.(adjust according to your pan size)
Chocolate Chips Chocolate Ice Cream: I used 2 cups from the 1 liter pack
Chocolate Sauce: 1 or 2 tbsp to drizzle (more while serving-Optional)
Caramel Sauce: 1 or 2 tbsp to drizzle.
Cashew-nuts: Chopped, 2 to 3 tbsp to sprinkle.
Snickers: 2 bars, chopped...you can use more if you like.
Method:
First lets make the brownie...for detailed step by step instruction pls go to my older brownie post.
Lightly grease the pan, melt butter, add in the sugar and mix well with a whisk. Stir in vanilla essence and beaten eggs and mix well again. Stir together baking powder, cocoa powder, flour, and salt. Gradually add this to the wet mix. Mix everything till nicely incorporated. Pour into greased pan. Bake for 20-25 min or until done.
Nicely baked brownie crust waiting for the topping.
Allow the brownies to cool down and then transfer them to the freezer for 30 min or so.
Take out the pan from the freezer, wipe the inside of the pan to remove any grease residue.Top brownie layer with softened vanilla ice cream, I used 2 cups. Return the pan to the freezer until the ice cream is firm again.
Spread softened chocolate ice cream (about 2 cups) over this.
Chop up the snickers.
And sprinkle the chopped snickers and 1 tbsp of chopped cashewnuts on top of the ice cream.
Put the pan back to the freezer, let it stay overnight. So easy!! but the waiting part is the longest ...
Slice and serve with a drizzle of chocolate sauce.
