Chinese batter fried shrimp, is more of an appetizer which my kids love to munch on. Marinated shrimp is dipped in batter and deep fried.....oh yum!!
Shrimps cook really fast and hence there is no precooking, more or less a quick appetizer where you just dip and fry....pretty easy! huh!
While growing up, amma used to make this, and I have seen her creaming the egg whites to add into the batter and so I also do the same....it does give a crispy, spongy yumminess!! So try that little tip from my mom, when you make.
I created this recipe with Ching's Secret's product out of my love for their authentic Chinese flavor. Have you tried Spicy Shrimp Noodles....yet??

Serves: 2
Shrimp might cause allergy to some, pls devein it before cooking.
Ingredients:
For the marinade:
Shrimp: 100-150 gms, cleaned.
Ching's All In One Sauce: 1 tsp.
Ching's Red Chilly Sauce: 1 tsp.
Pepper powder: 1/2 tsp.
Turmeric Powder: 1/4 tsp (I use turmeric purely for its health benefits)
A fat pinch of salt
For the batter:
Flour: 2 tbsp
Corn flour: 2 tbsp.
Ching's Soy Sauce: 1 tsp.
Kashmiri Chilly Powder: 1 tsp
Egg White: 1, beaten to stiff.
A pinch of Baking Soda.
Enough water to mix.
Salt to taste (note that the sauces contain salt, so add accordingly)
Oil for deep frying
Method:
Lets marinate the shrimp...first up, a tsp of Ching's All In One sauce
Add in 1 tsp of Ching's Red Chilly Sauce.
Pepper, turmeric and a fat pinch of salt and mix them up...keep aside while we make the batter.
In a bowl, dip in 2 tbsp flour, 2 tbsp cornflour, salt, a pinch of baking soda.....and mix them. Then add in 1 tsp Ching's Soy sauce, 1 tsp Kashmiri Red Chilly powder and mix.
Add in beaten egg white (stiff)
And enough water to make it into a smooth, thick batter....without any lumps...so better whisk it out!
Add the shrimp into it....
And dip each one and fry in hot oil, strain on a paper napkin.
By this time, my kids were in the kitchen!! ha!
Serve with tomato ketchup.
